We’ve been working hard to cut dairy and gluten out of family’s diets since we realized dairy was the cause of The Actress’ back pain. And since Dolphin Lover takes about 15 anti-inflammatory pills each day to treat her GI condition, we are moving toward a wheat free diet for her.
It’s been fun trying out a bunch of new recipes. Tonight will be the first big challenge—cooking dairy-free, gluten-free on a hectic school night.
Here are a few of the things we’ve cooked recently that everyone liked:
1. Scrambled eggs with scrambled eggs with onion, pepper, tomatoes, broccoli, spinach and avocado.
2. Peppered steak with thai noodles and peanut sauce. (From The Wheat Belly Cookbook.) The noodles are shirataki noodles. The girls weren’t totally thrilled with the texture (and the fishy smell went away after rinsing before cooking), but given the choice of pasta or no pasta, they decided they were just fine.
3. Pecan crusted pork chops, potatoes and salad. The pork chop recipe was from The Wheat Belly Cookbook. First you coat the pork chop in ground golden flax seeds, then dip in an egg/soy sauce mixture and coat with crushed pecans before frying. The Small Girl (8), loves the Strawberry Fields salad at Zios, so she helped me make our own version of this. We used spinach, lettuce, pears, cucumber, onion, strawberries, walnuts and pomegranate seeds and a bit of a raspberry vinaigrette dressing. (DELICIOUS!!) The rest of the family had baked potatoes (Tofutti sour cream and Earth Balance non-dairy “butter”) and I had a plain sweet potato.
4. Lots of fruit, grainless granola and PBJ Bread. The Small Girl has really been into fruit lately (and Dolphin Lover is slowing coming around). I’ve always had a fruit bowl that sits on the counter, but I had to add a second bowl because the kids are going through the fruit so fast. We tried the grainless granola listed in The Wheat Belly Cookbook. I live on nuts and fruit. My kids aren’t such big fans of nuts. THIS… I got them to eat! It has pecans, sunflower seeds, chia seeds, pumpkin seeds and coconut and is flavored with cinnamon and a tiny bit of artificial sweetener. VERY tasty! We also made the PBJ Bread from Wheat Belly. It’s another recipe we’ll have to play around with. The bread contains peanut butter and peanut flour, but the peanut butter flavor didn’t pop the way I wanted it to.
Everyone is back to school today. EVERYONE! Full days for EVERYONE! This will be the first full day since mid-September that I’ve had everyone in school! So… no more blogging for me. It’s time to do a bit of cleaning and then lace up those shoes and hit the street!
